Carottes Râpées |Salad
Carottes Râpées is an extremely simple, and classic French salad.
It is super easy, and you can put in salads, sandwiches, and more.

|Ingredients|
· 2ea carrots, large
· 30ml extra-virgin olive oil
· 8g dijon mustard
· 16ml lemon juice
· black pepper corn
· 8g sugar
· 8g kosher salt
|Directions
1.
Prepare all ingredients.
2.
Squeeze a half of lemon.
3.
Julienne the carrots then set aside.
4.
In a small bowl put the carrot, salt, and sugar. Mix until the salt, and sugar dissolve.
5.
After half an hour, squeeze out the excess carrot juice.
6.
Put the black pepper, dijon mustard, and lemon juice over the carrots, and mix well.
7.
Finally, pour extra-virgin olive oil, and toss together.
8.
Ideally, allow the salad to marinate in the fridge for an hour or longer.
