You can see the tender, juicy pork cooked in a rich, flavourful peppery sauce.

Pork adobo, aka braised pork is super easy to make at home.
It’s popular Filipino dish made with pork, soy sauce, vinegar, and other seasoning.
Leave to simmer over low heat for 1 hour until the meat is very tender and juicy.
It has tangy and savory taste and served with steamed rice.
This recipe is homey version that every one can make easily.

Ingredients

600g pork belly

75ml soy sauce

60 ml vinegar

280 ml cup water

1tbsp brown sugar

1 slice ginger
-
10 cloves garlic
-
1tbsp whole black peppercorn
Directions
Cut the pork belly into sizeable chunks.
In a pan, turn the fire to high heat and sear the pork belly until golden brown.
Take the pork belly out and add the garlic, black pepper corns and ginger for a few minutes.
Add the pork belly, bay leaves.
Add soy sauce, vinegar, and brown sugar to simmer.
Let it cook in high heat for 5 mins.
Turn the fire to low heat, cover with a lid and leave it to cook for 1 hour.
(I added some baby bok choy at the end.)
Serve with the rice.

You can also use ribs for this dish. Also, I put some baby bokchoy for crispy texture.
