The versatile pickled vegetables go well with meats such as chicken, and even fish fillets. They are delicious as a snack which is crunchy and salty. They are also perfect for adding to sandwiches, hamburgers, and bowl meals.

|Ingredients
· 2 cups apple cider vinegar
· 3cups water
· 2/3cups sugar
REPLACEABLE to (Monkfruit Sweetener 4tbsp) (Optional)
· 2tsp kosher salt
· 1tbsp pickling spice
· 500g vegetables
· 3cloves garlic, smashed
|Directions
1.
Prepare all ingredients.
2.
Slice the vegetables into approximately 0.5-1.0cm thick.
3.
In a pot combine the water, vinegar, salt, sugar, garlic and, pickling spice.
4.
Bring to a light simmer and stir until salt is dissolved.
5.
Add the vegetables in a jar.
6.
Bring to a light simmer and stir until salt is dissolved.
7.
Pour the brine over the vegetables.
They can be stored in the refrigerator for up to 2 months.
