Kimchi fried rice is a comforting Korean dish made with kimchi (fermented spicy cabbage), leftover rice, and other ingredients. It’s quick and easy Korean dish much loved by Koreans:)
It is flavorful, slightly spicy, and can be customized with various additions such as meat, vegetables, ham or pork.
I like to put a sunny side up egg on the top.

Ingredients

98g well-fermented kimchi, diced

200g cooked rice(preferably day-old rice)

1 egg

90g spam, diced
-
20g green onion, chopped

20g garlic confit
-
1tbsp garlic confit oil

1tbsp olive oil
-
1g black pepper
-
1tsp gochujang
-
1tsp soy sauce
-
1tsp Chinese black vinegar
-
1/2tsp gochugaru
-
1 egg, cooked sunny side up or per your preference

5g green onion, chopped
-
1g sesame seeds
-
1/2tbsp sesame oil

Directions
In a small bowl, combine the gochujang, soy sauce, Chinese black vinegar and gochugaru, and mix well.
Heat the pan over medium high heat and add the olive oil and garlic confit oil.
Add the green onion and garlic confit.
Stir for one to two minutes until get golden brown and add spam and fry until it is cooked through and slightly browned.
Add kimchi to the pan and mix them for a couple minutes allowing the flavors to meld together.
Add the sauce and stir well. Add the rice to the pan and break up and pressing down with spatula.
Add one egg and stir-fry for a few minutes until the rice is heated through and well-coated with the sauce.
Top with sunny side up egg and garnish with green onion, sesame seeds, sesame oil.

I used a little bit of leftover garlic confit that boosted the fried rice’s flavor full of umami.
But it is optional!
