Silky and velvety texture with a slightly salty but subtly sweet taste!!
Salmon Gravlax aka. cured salmon is a way of curing salmon with salt, sugar, and other aromatics.
It gives new textures and flavours and extends the shelf life of the salmon.
The salt draws out moisture from the fish, inhibiting the growth of bacteria. Meanwhile, the sugar provides a subtle sweetness that balances the saltiness.
During the curing time, the salt and other ingredients penetrate the flesh, infusing the salmon with flavors and transforming its texture. The result is a silky and velvety texture with a slightly salty yet subtly sweet taste.
The salmon has released a lot of liquid and the outside of the salmon has changed the color becoming a deeper and brighter shade of orange.
It has a certain tanginess and creaminess with nuanced aromas of cured salmon.

Ingredients

900 g salmon, sashimi grade

180 g kosher salt

180 g brown sugar

2 pcs lemon zest

3 pcs bay leaves

50 g dill, roughly chopped

1/2 tsp dijon mustard

1/2 tsp cream cheese

30 g sliced cucumber
-
15 g sliced radish
-
sesame seeds, as needed, for topping

Directions
For curing
Combine salt, sugar, bay leaf and lemon zest in a bowl.
Lay out some Saran wrap to wrap a salmon.
Sprinkle a little bit of the mix, lay your salmon, pour the rest of the mix all over and press it into the salmon.
Tuck it into bed and put it into a tray. Top with something flat like a small cutting board.
Refrigerate for 36 to 48hrs.
After 48 hrs, rinse off the salmon and pat dry. Top with some dill for extra flavor and slice into nice pieces.
For sandwich
Grab yourself a good piece of bread.
Spread dijon and cream cheese.
Lay on some sliced cucumber.
Top with beautiful cured salmon, sliced radish, sesame seeds, and a fresh dill.
