Bossam aka Koreanboiled pork belly is thinly sliced and served with various condiments and side dishes.
Usually, served with salted Napa cabbage leaves, ssamjang, sauce, and perilla leaves.
A fermented soybean paste eliminates the smell of pork and makes it flavorful.
Bossam is a general dish in Korea, often enjoyed as a special meal at family gatherings or during the Kimjang season. It is known for its rich and savory flavor, which is balanced by fresh and crisp cabbage leaves, perilla leaves, or lettuce. The combination of the tender pork belly, spicy and savory condiments, and refreshing vegetables creates a harmonious blend of textures and flavors.

Ingredients

600g Pork belly

5pcs Garlic clove

2pcs Green pepper(or red chili)

3stalks Green onion

1tbsp Soybean paste

¼tsp Ginger powder

3pcs Bay leaf

45ml cooking wine
-
½tsp Black pepper corns

1tbsp Soy sauce
-
1200ml Water
-
250g Napa cabbage
-
1tbsp Kosher salt
-
1tbsp Brown sugar
-
1tbsp White vinegar
-
2tbsp Hot water
-
½tsp Green pepper(or red chili)
-
½tsp Gochugaru(Korean hot pepper flakes)

½tsp Minced garlic
-
½tsp Fermented salted shrimp
-
½tsp Sesem seeds

1tbsp Sesame oil
For pork
For cabbage
For shrimp sauce
Directions
For cabbage
Combine salt, sugar, vinegar and water in a large bowl.
Mix well and let it for 30 mins to 1 hr.
For pork
Char garlic cloves, green pepper, green onion to create a new flavors and aromas.
Add Green onion, green pepper, garlic cloves, pork, cooking wine, bay leaves, black pepper corns, soybean paste, soy sauce, ginger powder and the water to large pot.
Take out the cooked pork and slice it put them on a plate.
For shrimp sauce
In a sauce bowl, add the green pepper(spicy), gochugaru, minced garlic, fermented salted shrimp, sesame seeds, sesame oils.
Mix it well.
